## About this wine

Pierre Borel created Brindezingue as an approachable, bistro-style red designed for casual, everyday drinking. Sourced from organically farmed Cabernet Franc vines in the Bourgueil area of the Loire Valley, the wine reflects a playful spirit—brindezingue being French slang for quirky or offbeat. Pierre Borel studied winemaking in Angers, gained experience at natural estates like Domaine des Griottes and Domaine du Mortier, and launched his own domaine in 2006.

## Interesting facts

- 'Brindezingue' is French slang for quirky, wild, or slightly offbeat.
- The vineyard is certified organic by Ecocert and harvested entirely by hand in multiple passes.
- Bottled unfined and unfiltered with minimal added sulfites (<20 mg/L).

## Food pairing

The wine's bright acidity, gentle tannins, and fresh herbaceous quality make it an ideal companion for lighter meats, earthy mushrooms, and young goat cheeses without overwhelming delicate flavors.

## Wine making process

The grapes are completely de-stemmed and undergo a short maceration of around 10 days to extract delicate tannins. Fermentation occurs spontaneously with native yeasts in stainless steel or fiberglass tanks. Minimal sulfur is added post-racking, and the wine is bottled unfined and unfiltered to preserve natural purity and freshness.
