## About this wine

Les Bories Jefferies is a boutique estate situated in Caux, near Pezenas in the Languedoc region of France, founded by English winemaker Joseph 'Joe' Jefferies. Since establishing the domain in 2003, Jefferies has farmed 4.3 hectares of old vines planted on ancient basaltic lava flows using organic and biodynamic methods. This bottling is part of the international Brutal!!! collective, an informal alliance of European natural winemakers creating experimental, unadulterated cuvees bottled under a shared label concept.

## Interesting facts

- Winemaker Joe Jefferies moved from Warwickshire, England to the Languedoc in 2003 to make zero-intervention wines.
- The grapes grow on 70-year-old vines planted directly atop ancient basalt lava flows in Caux.
- Part of the global Brutal!!! movement, reserved for experimental zero-sulfur natural wine cuvees.

## Food pairing

The lively acidity and light phenolic texture from skin maceration allow this cuvee to slice through rich, fatty meats such as roasted pork belly or spicy merguez, while its wild herbal character mirrors roasted poultry and artisanal cured meats.

## Wine making process

The grapes are hand-harvested from 70-year-old vines grown on volcanic basalt soils. A field blend composed primarily of Terret Blanc and Terret Gris with a small splash of Carignan, the whole bunches undergo spontaneous skin maceration and co-fermentation using 100% native wild yeasts. The wine ages on total lees in neutral tanks for 8 to 11 months before being bottled without added sulfites, fining, or filtration.
