## About this wine

Domaine Denis Bachelet is one of Burgundy's most revered cult producers, working from a micro-estate of less than 4.5 hectares in Gevrey-Chambertin. Handled by Denis Bachelet and his son Nicolas, the estate's Côte de Nuits-Villages cuvée is drawn from 1.04 hectares across old-vine parcels in Brochon, planted in 1952. Despite its village-level status, this wine is celebrated globally for its extraordinary purity, concentration, and elegance. Starting with the 2024 vintage, the cuvée has been reclassified under the Fixin appellation.

## Food pairing

This medium-bodied red Burgundy features vibrant acidity, fine-grained tannins, and subtle earthy undertones, making it exceptionally suited for elegant game birds, duck, and tender roasted meats. The wine's natural acidity cuts through rich animal fats while harmonious red fruit notes complement roasted herb profiles.

## Wine making process

Grapes are hand-harvested from old vines averaging 50 to 70+ years of age and sorted rigorously on a vibrating table. The fruit is 100% de-stemmed and lightly crushed before a one-week cold maceration. Fermentation takes place over 12 to 15 days in open vats using native yeasts, accompanied by twice-daily manual punch-downs. The wine matures for 15 to 18 months in French oak barrels (20% to 25% new) and is bottled by hand without fining or filtration.
