## About this wine

The Marion Cabernet Sauvignon 2020 is a 100% Cabernet Sauvignon from the Veneto region of Italy, classified as an IGP/IGT wine. Azienda Agricola Marion, a family-run estate managed by Stefano, Nicoletta, and Marco Campedelli, is situated in the Marcellise Valley, east of Verona. The winery focuses on producing wines with high-quality fruit and balanced acidity, aiming to reflect their regional terroir. A distinctive practice for this Cabernet Sauvignon involves partially drying the grapes for approximately 30-40 days before fermentation, a method inspired by the Amarone tradition of Veneto.

## Interesting facts

- Grapes are partially dried for 30-40 days, a nod to Amarone.
- A family affair: managed by Stefano, Nicoletta, and Marco Campedelli.
- Vineyard sits at 100 meters altitude on calcareous soil.
- Aged in 350-liter Slavonian oak barrels.

## Food pairing

The wine's full body and firm tannic structure make it an excellent companion for rich, protein-heavy dishes. The tannins bind with the proteins in the meat, softening both the wine and the food, while the wine's fruit notes can complement or contrast with savory and sweet elements in the dishes.

## Wine making process

The Marion Cabernet Sauvignon 2020 is produced from 100% Cabernet Sauvignon grapes. The harvest takes place between late September and early October. A key technique involves partially drying about half of the grapes for approximately 30-40 days before fermentation. The remaining grapes are harvested in a super-ripe state. The two lots are fermented separately. After fermentation, the wines are aged in 350-liter Slavonian oak barrels for about 30 months. The two distinct vinifications are kept separate for this period before being assembled and bottled.
