## About this wine

Caberrubia Fino Carrascal is an unfortified Fino Sherry from Bodegas Luis Pérez S.L. in Andalusia, Spain. It revives an ancestral winemaking style, blending selected vintages ('Selección de Añadas') to highlight the characteristics of the Carrascal vineyard. The winery, founded by oenology professor Luis Pérez, emphasizes the importance of vineyard origin and traditional methods in expressing the terroir of Jerez.

## Interesting facts

- Revives a 19th-century Sherry winemaking tradition.
- Grapes are hand-harvested at night.
- Vineyard is in conversion to organic farming.
- Features a rare unfortified Fino style.

## Food pairing

The wine's high acidity and salinity cut through rich or fatty foods, while its nutty and savory notes complement cured meats and aged cheeses. Its freshness also makes it a great counterpoint to lighter seafood and vegetable dishes.

## Wine making process

Caberrubia Fino Carrascal is produced from 100% Palomino Fino grapes sourced from the Carrascal vineyard. The grapes are hand-harvested at night and briefly sun-dried before basket pressing. Natural yeast fermentation takes place in oak casks. The wine then ages in casks with a small headspace for flor development, a revival of 19th-century 'Selección de Añadas' blending practices to capture the vineyard's essence.
