## About this wine

Calera Wine Company was founded in 1975 by Josh Jensen, who was inspired by Burgundian wines after working harvests at Domaine de la Romanée-Conti and Domaine Dujac. Convinced that limestone soil was key to world-class wines, Jensen spent two years searching California before discovering a remote limestone quarry high in the Gabilan Mountains. In 1990, his efforts led to the official creation of the Mt. Harlan AVA, where Calera remains the sole grape grower. Situated 2,200 feet above sea level, the vineyard benefits from cool marine breezes, high-elevation sunshine, and limestone-rich soils.

## Interesting facts

- Calera is the sole grape grower in the Mt. Harlan AVA, established in 1990 high in the Gabilan Mountains.
- Founder Josh Jensen searched California for two years specifically for limestone soils inspired by Burgundy.
- At 2,200 feet elevation, it is one of California's highest and coolest vineyard sites.

## Food pairing

The rich, full body and creamy textures from barrel fermentation and malolactic fermentation pair exceptionally well with rich poultry, pork, and buttery seafood dishes. Meanwhile, the vibrant high-elevation acidity cuts cleanly through cream sauces, soft cheeses like burrata, and rich seafood, restoring balance.

## Wine making process

The 2023 Mt. Harlan Chardonnay was crafted from organically farmed estate vineyards planted on pure limestone soils. The grapes underwent 100% barrel fermentation in French oak barrels followed by full malolactic fermentation. The wine was aged for 15 months in French oak, utilizing 30% new French oak and 70% neutral French oak. This approach preserves the natural mineral intensity and cool-climate acidity of the high-altitude site.
