## About this wine

Calistri is a 100% Sangiovese red wine from Castello di Corbara, situated in the Lago di Corbara DOC appellation of Umbria, Italy. The grapes are sourced from the estate's oldest vineyard, 'Calistri,' planted in 1972. This single-vineyard wine is produced in limited quantities, with an annual output of no more than 3000 bottles. The estate has a historical connection to the Montemarte family and is currently managed by the Patrizi family, who prioritize sustainability and the valorization of native grape varieties.

## Interesting facts

- The Calistri vineyard was planted in 1972, making it the oldest on the estate.
- Annual production is capped at a maximum of 3000 bottles.
- The vineyard overlooks the historic Castello di Corbara.
- The original training method was the ancient Umbrian-Tuscan 'capovolto' style.

## Food pairing

The wine's full body and softly tannic structure make it well-suited for richer protein dishes. The tannins bind with the proteins in meat, softening both the wine and the food. Flavors of dark ripe fruit and hints of liquorice in the wine can complement the savory notes of roasted meats and aged cheeses.

## Wine making process

The Calistri wine is produced from 100% Sangiovese grapes hand-picked in mid- to late September. Vinification takes place in stainless steel vats at controlled temperatures (25°C-28°C) with a maceration period of 15-18 days, utilizing manual punch-down techniques. Post-fermentation, malolactic fermentation occurs in small French oak casks, followed by 16 months of aging. The wine then undergoes an additional 7-9 months of bottle aging in thermoregulated cellars. The vineyard, planted in 1972, is managed with a maximum yield of 5000 kg per hectare.
