## About this wine

Bodegas Campillo, established in 1990 by Julio Faustino Martínez, is designed on the classic French Bordeaux château model, surrounded by its own estate vineyards at the foot of the Sierra Cantabria in Laguardia, Rioja Alavesa. The winery was a pioneer in advocating for the approval of Chardonnay in the Rioja region, blending it with the traditional Viura grape to create a distinctive, structured white wine.

## Interesting facts

- Bodegas Campillo was built in 1990 to mimic the classic French Bordeaux château model, surrounded entirely by its own vineyards.
- The winery was among the absolute first to legally plant and advocate for Chardonnay in the Rioja region.
- Malolactic fermentation is completely blocked to maintain a vibrant, crisp acidity that balances the rich oak aging.

## Food pairing

This barrel-fermented white wine balances vibrant acidity with a creamy, textured mouthfeel. It pairs beautifully with fatty fish, poultry, and rich, creamy sauces that match its body, while its crisp acidity cuts through the richness of cheeses and buttery dishes.

## Wine making process

The grapes are sourced from the Finca Monte estate at 650-700 meters elevation. After 28 hours of cold skin maceration to extract primary aromas, fermentation takes place in small oak barrels for 20 days using a mix of native and selected yeasts. Malolactic fermentation is strictly blocked to preserve natural acidity. The wine is aged for 3 to 4 months in new French and American oak barrels with regular lees stirring (bâtonnage) to enhance texture and complexity.
