## About this wine

Campolibero is the dedicated certified organic line by Ricossa Antica Casa, a historic winery with roots in Piedmont dating back to the late 19th century. This Barolo represents a commitment to sustainable viticulture, sourcing Nebbiolo grapes from organically farmed vineyards in the prestigious Barolo DOCG. The Ricossa family has long championed the expression of Piedmont's unique terroirs, and this organic expression highlights the purity of the Nebbiolo grape while respecting the local ecosystem.

## Interesting facts

- Campolibero translates to 'Free Field,' reflecting the winery's commitment to organic farming and biodiversity.
- Ricossa's history began in the late 1800s as an award-winning port of call for travelers in the outskirts of Asti.
- This wine is crafted from 100% Nebbiolo, a grape named after 'nebbia,' the autumn fog that blankets Piedmont's hills during harvest.

## Food pairing

Barolo's high acidity and powerful tannins require rich, savory dishes with ample fat and protein to bind the tannins. Earthy flavors like truffles and wild mushrooms mirror the wine's complex tertiary potential, while slow-cooked meats complement its robust structure.

## Wine making process

The grapes are harvested by hand from certified organic vineyards. Fermentation takes place in temperature-controlled stainless steel tanks with extended maceration on the skins to extract Nebbiolo's characteristic tannins and color. Following the strict DOCG regulations, the wine is aged for a minimum of 38 months, including at least 18 months in traditional oak casks, allowing the intense tannins to soften and complex secondary characteristics to develop.
