## Food pairing

The Camurrìa Orange's medium body, savory notes, and beautiful acid core allow it to stand up to richer dishes than typical white wines. Its aromatic complexity, with notes of citrus, stone fruits, and sweet spice, complements a wide range of flavors, including those with a touch of bitterness or spice. The slight tannic grip from the extended skin contact also helps it cut through the richness of certain foods, making it incredibly versatile for dishes that bridge the gap between white and red wine pairings.

## Wine making process

The Camurrìa Orange is produced from organically grown Grillo grapes, hand-harvested in mid-September from 30-year-old vines. The winemaking process begins with spontaneous fermentation, followed by a 5-day maceration on the skins, which imparts the wine's characteristic orange hue and texture. Malolactic fermentation takes place in stainless steel tanks. The wine is then aged for 2 months in neutral barrels, followed by 9 months in stainless steel tanks on its fine lees. It is bottled unfined and unfiltered, preserving its natural character and complexity. SO2 levels are carefully managed, with reported Free SO2 at 6 mg/L and total SO2 at 27 mg/L.
