## About this wine

Fabrice and Lauré Chaillou established their estate in Saint-Lambert-du-Lattay within the Loire Valley in 2016. Fabrice honed his craft working alongside legendary Loire winemaker Jo Pithon, where he learned the importance of conscientious farming. Managing roughly 3 hectares of old and young vines on schist soil, the couple cultivates their vineyards using certified biodynamic methods to produce minimal-intervention natural wines.

## Interesting facts

- Fabrice Chaillou worked alongside renowned Loire winemaker Jo Pithon before founding his own domain.
- Produced from vines ranging from 10 to 100 years old grown on schist and clay-loam soils.
- Crafted as a pure zero-zero natural wine with zero added sulfur, fining, or filtration.

## Food pairing

The high, vibrant acidity and clean mineral focus of this dry Chenin Blanc cut through the richness of goat cheese and delicate seafood while harmonizing perfectly with green herbs and citrus accents.

## Wine making process

Hand-harvested from Chenin Blanc vines ranging between 10 and 100 years old. The grapes undergo direct pressing of whole clusters and spontaneous fermentation with indigenous yeasts in fiberglass tanks. The wine is aged for 9 months on fine lees in fiberglass tanks before being bottled unfined, unfiltered, and with no added sulfur dioxide.
