## About this wine

Cantina Furlani is managed by fourth-generation winemaker Matteo Furlani in the high-altitude mountains of Trentino. Tending vineyards located between 700 and 720 meters above sea level on the Altopiano della Vigolana and the hills of Povo, Furlani blends historical family tradition with rigorous biodynamic farming. Rossino Frizzante is an artisanal sparkling interpretation of Schiava, an indigenous red grape variety native to the Dolomites region.

## Interesting facts

- Vineyards are situated at mountain elevations reaching over 700 meters in the Italian Alps.
- Secondary bottle fermentation is triggered using frozen unfermented grape must from harvest instead of added commercial sugars.
- The wine is left on its lees ('sur lie') without disgorgement or added sulfites.

## Food pairing

The lively effervescence and vibrant natural acidity cut seamlessly through rich, fatty cured meats and fried textures. The light frame and delicate profile harmonize with cured alpine pork, pizza, and fried appetizers without overwhelming them.

## Wine making process

Hand-harvested Schiava grapes undergo a short skin maceration of four to five days followed by spontaneous primary fermentation using indigenous yeasts in stainless steel tanks without temperature control. The secondary fermentation occurs naturally in the bottle via the 'metodo interrotto' method, where unfermented grape must saved from harvest is added in spring to kickstart re-fermentation. The wine is unfined, unfiltered, not disgorged, and made with zero added sulfur.
