## About this wine

Casina Valle Asinari Barbera d'Asti 2021 is a 100% Barbera wine from the Barbera d'Asti DOCG appellation in Piedmont, Italy. Produced by Giacomo Borgogno & Figli, a winery established in 1761, it represents a commitment to traditional winemaking. The grapes are sourced from the historic Cascina Valle Asinari estate. The winery's philosophy centers on respecting tradition and the land, with a dedication to organic practices.

## Interesting facts

- Founded in 1761, Giacomo Borgogno & Figli is one of Piedmont's oldest wineries.
- The winery achieved organic certification in 2019.
- A portion of the wine is aged in large Slavonian oak casks, a traditional method.
- The estate is located in San Marzano Oliveto, a recognized area for Barbera d'Asti.

## Food pairing

The wine's pleasant acidity and medium body cut through the richness of fatty meats and creamy sauces, while its fruit-forward character complements savory dishes. The tannins provide a structure that stands up to protein, creating a balanced and satisfying pairing.

## Wine making process

The Casina Valle Asinari Barbera d'Asti is produced from 100% Barbera grapes. Fermentation occurs over 12 days at low temperatures (24-28°C) using indigenous yeasts. Post-fermentation, 70% of the wine matures in stainless steel tanks for 10 months, while the other 30% is aged in large Slavonian oak casks for the same period. The wine is then blended and undergoes a further 6 months of refinement in the bottle.
