## About this wine

Produced by the historic Château de Trinquevedel in the Southern Rhône Valley, 'Ce qui nous lie' (meaning 'That Which Binds Us') is a special cuvée crafted by fourth-generation vignerons Céline and Guillaume Demoulin. The name celebrates their partnership, love, and deep connection to the land. While the estate is world-famous for its traditional Tavel rosés, the strict rules of the Tavel AOP prohibit red wine production under that name. Consequently, this organic red is released under the Côtes du Rhône appellation, offering a fresh, modern expression of the region's unique terroir.

## Interesting facts

- The name 'Ce qui nous lie' translates to 'That Which Binds Us,' celebrating the partnership and love of the husband-and-wife winemaking team.
- Although grown on the prestigious soils of Tavel, it is labeled as Côtes du Rhône because Tavel AOP strictly permits only rosé wines.
- The vineyards feature 'galets roulés' (quartzite pebbles) which absorb heat during the day and radiate it back to the vines at night.

## Food pairing

This medium-bodied, fresh red wine thrives alongside casual bistro fare. Its vibrant acidity and soft tannins cut through the richness of charcuterie and pork terrines, while its bright red fruit notes beautifully complement grilled poultry and roasted lamb without overpowering them.

## Wine making process

This organic red wine is a blend of 75% Grenache, 13% Syrah, and 12% Mourvèdre, sourced from vineyards in the Tavel commune featuring sandy soils and quartzite pebbles. The grapes are harvested entirely by hand and sorted on vibrating tables to ensure only pristine fruit is used. Following 100% destemming, fermentation takes place in temperature-controlled, epoxy-resin-lined concrete tanks. Gentle pump-overs are utilized to avoid over-extracting harsh tannins, and the wine is aged briefly in concrete vats to preserve its vibrant, crunchy primary fruit character before early bottling.
