## Wine making process

The Ceppatella Sangiovese 2013 is produced through hand-harvesting in early October, followed by gentle destemming and crushing. Alcoholic fermentation occurs with natural yeasts in stainless steel tanks for about 10 days, with maceration lasting 30 days on the skins. The wine undergoes malolactic fermentation in large barrels (tonneaux). Aging involves 14 months in barriques and Slavonian oak, or 30 months in Slavonian wooden barrels, followed by a minimum of 5 months of bottle aging.
