## About this wine

Founded by natural winemaking pioneer Gideon Beinstock and his wife Saron Rice, Clos Saron is located in the Sierra Foothills of California. Sourced from high-elevation vineyards in Nevada County planted on granitic soils, Cerise Rosé represents a focused expression of organic viticulture. The 2024 vintage showcases the estate's dedication to low-intervention practices, capturing the distinct terroir of this mountain growing region.

## Interesting facts

- Founded by Gideon Beinstock, former winemaker at the legendary Renaissance Winery.
- Sourced from high-elevation (2,200 ft) dry-farmed vineyards planted on granitic soils.
- Co-fermented in neutral oak barrels and bottled completely unfined and unfiltered.

## Food pairing

The wine's bright acidity cuts cleanly through rich meats like duck, pork, and cured charcuterie, while its savory complexity and structure match well with roasted poultry and aged cheeses without overwhelming lighter dishes.

## Wine making process

The grapes were organically grown and hand-harvested from high-altitude, dry-farmed sites. The winemaking features a direct co-fermentation of Syrah and Cabernet Franc using native yeasts in neutral oak barrels. The wine underwent spontaneous fermentation without chemical additions or temperature control, followed by aging on fine lees in neutral oak vessels. It was bottled unfined and unfiltered with minimal added sulfur dioxide.
