## About this wine

Domaine de Vauroux was established in 1956 in Chablis when Jean-Pierre Tricon acquired the Vauroux farm. In 1972, Jean-Pierre and his brother Claude planted their first vines, forming the foundation of the modern estate. In 1998, Olivier Tricon took ownership and expanded the estate to 50 hectares. Located in the Yonne department of northern Burgundy, the estate's south and south-east facing slopes sit atop classic Kimmeridgian limestone soils, producing quintessential, precise expressions of unwooded Chablis.

## Interesting facts

- The vineyard soil dates back 150 million years to the Jurassic period and is rich in fossilized tiny oyster shells (Exogyra virgula).
- Estate owner Olivier Tricon began his career in wine as a humble vineyard worker before acquiring the estate in 1998.
- Domaine de Vauroux practices sustainable viticulture under High Environmental Value (HVE) principles.

## Food pairing

Classic Chablis pairs exceptionally well with seafood and light proteins thanks to its high acidity and signature Kimmeridgian minerality. The sharp acidity cuts through rich fats such as butter or goat cheese, while the subtle saline quality echoes raw shellfish and delicate poached fish perfectly without masking their flavors.

## Wine making process

Grapes are harvested mechanically at optimal maturity and strictly sorted upon arrival at the winery. Vinification begins with gentle pneumatic pressing followed by slow, low-temperature fermentation in temperature-controlled stainless steel tanks using selected yeast strains. The wine matures for 9 months entirely in stainless steel tanks with no oak exposure to preserve mineral tension and pure fruit expression. The wine is fined with bentonite clay and lightly filtered before bottling.
