## About this wine

Domaine Eleni & Edouard Vocoret was founded in 2013 by Édouard Vocoret and his Greek wife Eleni. Combining traditions from Édouard's family, who have farmed vines in Chablis since the 19th century, with Eleni's experience alongside legendary vigneron Vincent Dauvissat, the couple established a 5-hectare estate. The Le Bas de Chapelot parcel is located directly beneath the renowned Premier Cru Chapelot (a sub-climat of Montée de Tonnerre) and south of Grand Cru Blanchot. The 40+ year-old vines planted on Kimmeridgian limestone yield fruit that consistently punches far above its village-level designation.

## Interesting facts

- The vineyard sits directly below 1er Cru Chapelot, offering Premier Cru caliber quality at a village designation.
- Eleni Vocoret trained under legendary Chablis master Vincent Dauvissat before founding the domain.
- In 2022, they trialed shoot braiding (tressage) inspired by Domaine Leroy to boost harvest complexity.

## Food pairing

The high acidity and marine-influenced mineral core of this Chablis slice seamlessly through rich seafood and delicate cream sauces, while elevating natural briny flavors like raw oysters and shellfish without dominating subtle white meats.

## Wine making process

Harvesting is conducted entirely by hand from south-west facing slopes. Fermentation occurs naturally with indigenous yeasts in temperature-controlled stainless steel tanks. The wine is then aged for 12 months on fine lees in neutral, seasoned French oak barrels ranging from 6 to 30 years old, avoiding new oak influence to preserve pure terroir expression. Minimal sulfites are added prior to bottling. In 2022, the estate experimented with tressage (braiding upper vine shoots instead of hedging) to enhance physiological ripeness and aromatic intensity.
