Champagne Bourgeois-Diaz is led by Jérôme and Charlotte Bourgeois-Diaz in Crouttes-sur-Marne, situated in the western Vallée de la Marne. Jérôme represents the fourth generation of winegrowers at the family estate, having taken over leadership in 2000. The estate encompasses roughly seven hectares farmed under strict organic and biodynamic principles, certified by Demeter. The domaine is widely recognized for crafting precise, expressive, low-intervention Champagnes that showcase the terroir of Pinot Meunier.

## Wine making process

The Cuvée BD'M is crafted entirely from Pinot Meunier vines aged 40 to 60 years across three specific parcels. Fruit is hand-harvested and gently pressed using a traditional 1924 Coquard wooden press. Fermentation occurs spontaneously using native yeasts in a combination of stainless steel tanks, neutral oak barrels, and concrete vessels. The wine undergoes no fining or filtration and spends 24 to 36 months aging on its lees prior to disgorgement as a bone-dry Brut Nature with zero added sugar.
