## About this wine

Maison Ponson is a fifth-generation grower-producer based in Coulommes-la-Montagne in La Petite Montagne de Reims. Managed by brothers Maxime and Camille Ponson, the estate converted fully to organic farming across its 70 Premier Cru plots. This signature Premier Cru bottling highlights Pinot Meunier grown on limestone and sandy soils, reflecting a commitment to terroir-driven Champagne.

## Interesting facts

- Features a high 70% proportion of Pinot Meunier sourced entirely from Premier Cru vineyards.
- Aged on fine lees for 3 to 5 years in deep cellars before disgorgement.
- Brothers Maxime and Camille transitioned the entire 13.5-hectare estate to organic farming.

## Food pairing

The crisp high acidity and fine persistent mousse slice through rich textures like butter, cream, and shellfish, while the Meunier-driven red fruit and brioche notes complement savory poultry and aged soft cheeses.

## Wine making process

Produced using whole-cluster pressing in a traditional Coquard press using only têtes de cuvée. Fermented with native yeasts in stainless steel, concrete, and neutral oak barrels. Unfined and unfiltered, the wine undergoes secondary fermentation in bottle followed by 3 to 5 years of cellar aging on its fine lees, finished with a dosage of 7 g/L.
