## About this wine

Domaine Ruppert-Leroy was established in Essoyes in the southern Côte des Bar by Bénédicte Ruppert and Emmanuel Leroy. Taking over the family vineyards in 2010, they committed to full organic and biodynamic viticulture, creating a self-sustaining farm environment. This cuvée is unique as the estate's sole non-vintage release, built upon a perpetual reserve initiated in 2011 to showcase the ongoing evolution of their terroir across vintages.

## Interesting facts

- This is Domaine Ruppert-Leroy's only non-vintage cuvée, with all other wines being single-vineyard, single-vintage bottlings.
- The wine utilizes a perpetual reserve system started in 2011, incorporating reserve wines from every vintage since.
- Made with zero added sulfites and zero dosage, disgorged manually by hand ('à la volée').

## Food pairing

The high natural acidity and bone-dry Brut Nature character cut through rich, oily fish, creamy poultry, and aged cheeses, while the vinous perpetual-reserve depth matches roasted poultry and nut-rich dishes seamlessly.

## Wine making process

Spontaneous fermentation occurs with indigenous yeasts in 225L barrels and 500L demi-muids for 9 months on fine lees without fining or filtration. The base wine is blended into a perpetual reserve dating back to 2011. Secondary bottle fermentation uses around 22 g/L sugar and ages on lees for 18–20 months. The wine is disgorged manually by hand ('à la volée') with zero added sulfites and zero dosage (Brut Nature).
