## About this wine

Domaine Chanterêves was established in 2010 by Japanese winemaker Tomoko Kuriyama and French vigneron Guillaume Bott in Savigny-lès-Beaune. Combining German precision with Burgundian heritage, they expanded from micro-nÕgociants to estate owners in 2020. The 'Bas des Ées' parcel is a high-altitude vineyard at 470 meters elevation on the border of the Hautes-Côtes, situated on clay-limestone and stony marl soils bordered by pastures.

## Interesting facts

- Co-founder Tomoko Kuriyama trained in Geisenheim, bringing exceptional German precision to Burgundian winemaking.
- The high-altitude Bas des Ées vineyard sits at 470 meters above sea level, cooled naturally by surrounding pastures.
- Grapes undergo an unusually long six-hour press cycle to extract delicate aromatics and structured fine textures.

## Food pairing

High acidity and pristine salinity make this wine an exceptionally refreshing partner for rich seafood and creamy goat cheeses. The crisp citrus drive cuts cleanly through natural fats, while subtle lees contact provides enough texture to match light poultry dishes.

## Wine making process

Grapes are hand-harvested and subjected to a gentle 6-hour press cycle. Spontaneous fermentation occurs with indigenous yeasts and a native pied de cuve starter. The wine ages for 10 to 12 months in used oak barrels before blending and resting on fine lees in stainless steel tanks for 5 to 7 months. It is bottled unfined with minimal sulfur additions.
