## About this wine

Maison ChanterÊves was established in Savigny-lès-Beaune by Japanese-born winemaker Tomoko Kuriyama and native Burgundian Guillaume Bott. Starting in the 2024 vintage, this cuvÕe was renamed Bourgogne Côte d'Or La Combe to reflect its exclusive sourcing from old Pinot Noir vines in Puligny-Montrachet, a commune globally renowned for world-class white Chardonnay.

## Interesting facts

- Founded by Japanese winemaker Tomoko Kuriyama and Burgundian native Guillaume Bott.
- Sourced entirely from old Pinot Noir vines in Puligny-Montrachet, a commune famed for white wines.
- Crafted using 100 percent whole-cluster fermentation and bottled unfined and unfiltered.

## Food pairing

This light-to-medium-bodied red Burgundy pairs exceptionally well with lean meats like duck, pork, and poultry, as well as earthy mushroom dishes. Vibrant natural acidity cuts through fat, while delicate tannins complement soft cheeses and charcuterie without overwhelming them.

## Wine making process

Vinification is conducted with 100 percent whole clusters utilizing indigenous yeasts started via a natural pied de cuve in open wooden vats. Extraction is kept very gentle using bucket pump-overs and minimal foot punch-downs towards the end of maceration. The wine ages for 10 to 12 months in neutral used French oak barrels, followed by 5 to 7 months on fine lees in stainless steel tanks prior to being bottled unfined and unfiltered with minimal sulfur additions.
