## About this wine

Charlotte Chardonnay Pét-Nat is a natural sparkling wine born from a collaboration between winemaker Zsolt Sütő of Strekov 1075 and organic winegrower Peter Šroner. The Chardonnay grapes are cultivated in Vajka nad Žitavou within Slovakia's Nitra region. Strekov 1075 derives its name from the year the village was first recorded in history, Zsolti’s house address, and an absolute commitment to authentic regional terroir. A co-founder of the Slovak Autentista movement, the winery focuses on zero-sulfur, low-intervention winemaking.

## Interesting facts

- The number 1075 represents the historical year Strekov was first documented in written records.
- Only 1,200 bottles of this zero-sulfur Pét-Nat were produced in the 2023 vintage.
- This wine is hand-disgorged after ancestral bottle fermentation to ensure stability without fining or filtering.

## Food pairing

The high acidity and delicate, creamy effervescence of this ancestral method sparkling wine pair exceptionally well with fresh, raw seafood and tangy goat cheeses. High acidity cuts through rich textures and citrus marinades, creating a vibrant, palate-cleansing contrast without overwhelming light dishes.

## Wine making process

Hand-harvested Chardonnay grapes were direct-pressed into stainless steel tanks for spontaneous primary fermentation using native yeasts. Bottled by gravity in September 2023 while still fermenting with approximately 15 g/L of natural residual sugar, the wine completed its fermentation in the bottle under the ancestral method. After aging on fine lees, it was hand-disgorged in February 2024 to remove heavy sediment while preserving natural effervescence, bottled unfined, unfiltered, and with zero added SO2.
