## About this wine

Domaine Fontaine-Gagnard was created in 1985 by Laurence Gagnard and Richard Fontaine. Today, the 12-hectare domaine is managed by their daughter Céline Fontaine and her husband Frédéric Robert. The family's parcel in the Premier Cru climat La Boudriotte, specifically within the lieu-dit Les Fairendes, covers less than 0.8 hectares of old vines planted between 1945 and 1987 in limestone and iron-rich soils.

## Interesting facts

- The climat name La Boudriotte comes from a historical local vigneron named Mr. Boudriot.
- The lieu-dit name Les Fairendes refers to iron-rich soils historically linked to a forge operated by Morgeot Abbey monks.
- The wine is sourced from a single 0.8-hectare parcel of old vines planted between 1945 and 1987.

## Food pairing

The wine's bright acidity, rich body, and subtle oak maturation complement delicate shellfish and fine fish dishes while slicing through rich buttery sauces and creamy soft cheeses.

## Wine making process

Practicing sustainable viticulture with full soil ploughing, the estate harvested the 2023 white grapes manually in early September. Fermentation takes place with indigenous yeasts. The wine undergoes an 18-month élevage, spending 12 months in oak barrels (30% to 40% new oak) followed by 6 months on fine lees in stainless steel vats.
