## About this wine

Domaine des Fables was created in 2019 by winemaker and artist François Gilles in Savoy, France. The estate spans 4.5 hectares of biodynamically managed vineyards situated on steep hillside slopes overlooking the Rhône River and Lac du Bourget. Dedicated to low-intervention craftsmanship, the winery creates natural wines that reflect the alpine microclimate and distinct sandstone and limestone terroirs of Chautagne.

## Interesting facts

- Features a unique blend of 85% red Gamay and 15% white Jacquère grapes.
- Crafted using a 5-day 'en trempette' infusion technique with whole clusters.
- Produced with zero added sulfites and bottled completely unfiltered.

## Food pairing

The wine's light body, high acidity, and minimal tannins create a refreshing match for cured meats, soft alpine cheeses, and roast poultry without overpowering subtle flavor profiles.

## Wine making process

Chatawak is a unique co-ferment made from 85% Gamay and 15% Jacquère. Half of the Gamay is retained as whole clusters and steeped in fresh direct-pressed Gamay juice during a short 5-day infusion maceration. Co-fermented spontaneously with native yeasts in concrete vats, the wine undergoes no fining, filtration, oak aging, or added sulfur dioxide, followed by 10 months of aging on fine lees in concrete.
