## About this wine

Château Baulac Dodijos is produced under the stewardship of Jean-Baptiste Audy, a renowned Bordeaux négociant house established in 1906. Located in the commune of Barsac within the historic Sauternes appellation, the estate encompasses 10 hectares of clay-limestone soils planted with mature vines averaging 40 years of age. Situated near the confluence of the Ciron and Garonne rivers, the vineyard microclimate fosters the morning mists essential for crafting classical botrytized dessert wines.

## Interesting facts

- Harvesting requires multiple manual passes to select individual grapes affected by noble rot.
- The confluence of the Ciron and Garonne rivers creates unique autumn mists essential for Botrytis.
- Managed by the Audy family, who also own prestigious Right Bank estates such as Clos du Clocher.

## Food pairing

The high residual sugar and vibrant acidity of Sauternes require either strong salty counterpoints like blue cheese or rich, fatty delicacies like foie gras. The wine's rich sweetness also mirrors rich desserts, provided the dessert is not sweeter than the wine itself.

## Wine making process

Harvesting is conducted entirely by hand through successive selective passes (tries) to pick only grapes affected by noble rot (Botrytis cinerea). Following gentle pressing, the wine undergoes temperature-controlled fermentation to preserve natural freshness and concentrated sugars. The wine is subsequently aged for 12 months in French oak barrels to build texture and complexity prior to bottling.
