## About this wine

Château des Adouzes is located in the medieval village of Roquessels within the AOP Faugères appellation in Languedoc. In 2018, siblings Olivier and Jeanne Coste—representing the ninth generation of Famille Coste—acquired the estate to focus on crafting expressive red wines from ancient vines. Faugères is unique as the only appellation in Languedoc defined by a homogenous schist bedrock, which forces vine roots deep into rock fractures and stores daytime warmth.

## Interesting facts

- Faugères is the only appellation in Languedoc featuring a homogenous schist terroir.
- The estate includes ancient Carignan vines planted as far back as 1929.
- Owned by siblings whose family lineage of winemaking in Languedoc dates back to 1701.

## Food pairing

The firm tannins and elevated acidity of this red Faugères balance rich, fatty meats by cleansing the palate while highlighting savory herbal elements. Earthy schist minerality and deep berry fruit pair exceptionally well with roasted lamb, charred beef cuts, and aged hard cheeses.

## Wine making process

The estate practices certified organic and HVE 3 viticulture with dry farming and manual harvesting in small crates. Carignan grapes undergo carbonic maceration or traditional maceration depending on the parcel, while Syrah and Grenache are fully destemmed and undergo extended skin maceration for 20 to 30 days. The wine is aged exclusively in concrete and stainless steel tanks for 12 months to preserve pure fruit and minerality without oak influence.
