## About this wine

Château Jean Faux is a historic estate on the Right Bank of Bordeaux, with roots tracing back to the Middle Ages when it served as an outpost for the Knights Templar. The modern era of the estate began in 2002 when Pascal Collotte, a master cooper and co-founder of the prestigious Tonnellerie Saury, purchased the property. Working with renowned soil experts Claude and Lydia Bourguignon, Collotte restored the vineyards to ecological health. The 2022 vintage holds profound significance as it was Pascal's final growing season before his passing, completed by his family to honor his legacy.

## Interesting facts

- The estate was once an outpost for the Knights Templar and was later owned by a famous general under Louis XIV.
- Founder Pascal Collotte was a master cooper and co-founder of Tonnellerie Saury, which produces 40,000 barrels annually.
- The 2022 vintage was Pascal Collotte's final growing season, completed by his family after his passing.
- With 7,400 vines per hectare, the planting density is exceptionally high for Right Bank white wines.

## Food pairing

This structured white Bordeaux benefits from its barrel-fermented texture and vibrant acidity. It pairs beautifully with rich, textured seafood dishes like lobster or pan-fried flatfish, where the wine's body matches the weight of the food while its high acidity cuts through buttery sauces. The subtle oak integration also complements roasted poultry and earthy goat cheese.

## Wine making process

The estate's tiny white wine parcel is farmed using certified organic and biodynamic (Demeter) practices. Grapes are harvested entirely by hand. Vinification is designed to mirror the great white wines of Burgundy: spontaneous fermentation occurs in French oak barrels using indigenous yeasts. To preserve the natural, vibrant acidity of the Sauvignon Blanc and Sémillon, malolactic fermentation is blocked. The wine is then aged on its fine lees in French oak barriques (15% new, 85% neutral) sourced from Tonnellerie Saury.
