## About this wine

Château Paradis Rosé is the flagship wine from Château Paradis, located north of Aix-en-Provence. The estate, restored and expanded since 2003, draws its name from an ancient vineyard plot. The winemaking is overseen by Michel and Bastien Tardieu, with Philippe Cambie. The wine hails from the Coteaux d'Aix-en-Provence appellation, a region celebrated for its rosé production. The estate is currently in conversion to organic viticulture.

## Food pairing

The wine's fresh acidity and medium body make it versatile. It can cut through the richness of fatty fish and meats, while its subtle fruit notes complement lighter fare and appetizers. The dry profile ensures it doesn't overpower delicate flavors.

## Wine making process

Château Paradis Rosé is produced using the saignée method, where juice is bled off from fermenting red grapes. Grapes are completely destemmed before pressing, and juices are obtained via direct pressing. Each grape variety and plot is vinified separately. Fermentation occurs in thermoregulated stainless steel tanks at 15-17°C. The wine is aged in stainless steel tanks, remaining unoaked. The estate follows 'Lutte Raisonnée' farming practices and is in conversion to organic viticulture.
