## Wine making process

Castello di Bossi Chianti Classico 2021 is produced through fermentation in stainless steel tanks for about 8 days at 29-30°C, with pumpovers employed. The wine then undergoes aging for 12-18 months in used barriques and larger casks, with French oak used. This is followed by 3 months of bottle aging. The grapes are organically grown.
