## About this wine

Chianti Classico Nuovo from Fattoria Poggerino is a 100% Sangiovese wine from Radda in Chianti, Tuscany. The name '(N)Uovo' signifies both its status as a newer release and its unique aging in an egg-shaped concrete tank. Fattoria Poggerino is a family-run estate with a history dating back to the 1970s, deeply committed to organic and biodynamic farming. The high-altitude vineyards and rocky soils of Radda in Chianti are crucial to the wine's character. The 2022 vintage showcases the purity of Sangiovese, influenced by the specific terroir and the innovative use of the egg-shaped concrete aging vessel.

## Interesting facts

- The name '(N)Uovo' is a play on words: 'nuovo' (new) and 'uovo' (egg).
- Fattoria Poggerino practices organic and biodynamic farming.
- Vineyards are planted at altitudes between 400-500 meters.
- The wine ages partly in an egg-shaped concrete tank.

## Food pairing

The wine's firm tannins and bright acidity are well-suited to cut through the richness of fatty meats and complement the protein. Earthy notes in the wine find resonance with dishes featuring mushrooms, truffles, and herbs.

## Wine making process

The Chianti Classico Nuovo is crafted from 100% Sangiovese. Grapes are hand-harvested from late September to early October. Fermentation takes place in concrete tanks using indigenous yeasts at temperatures between 28-30°C, with maceration lasting approximately 35 to 55 days, involving pumpovers and manual punchdowns. After malolactic fermentation in a concrete egg, the wine matures for 12 months in a mix of large Slavonian oak casks and French oak tonneaux. It then undergoes at least 8 months of bottle aging before release. The estate adheres to organic and biodynamic farming practices.
