## About this wine

Poggio Petroso is a dedicated estate of the Casa Paladin wine group, capturing the historical medieval essence of Radda in Chianti, the historical capital of the Chianti League. The estate's vineyards are situated on a high plateau in Colle Petroso, Radda in Chianti, at elevations between 400 and 600 meters. This high-altitude terroir, characterized by clayey schists (galestro) and limestone (alberese), yields elegant, highly aromatic wines. The estate transitioned to certified organic farming starting with the 2019 vintage, adhering to low-impact, sustainable viticulture.

## Interesting facts

- Radda in Chianti was the historical capital of the medieval Chianti League.

- The vineyards are planted on galestro and alberese soils at high altitudes up to 600 meters.

## Food pairing

This Chianti Classico's high acidity and structured tannins make it exceptionally food-friendly. The vibrant acidity cuts through rich, fatty meats and savory tomato-based sauces, while the firm tannins pair beautifully with the proteins in roasted meats and aged cheeses, creating a balanced and harmonious dining experience.

## Wine making process

The winemaking process begins with a manual, fragmented harvest in October to ensure each micro-parcel is picked at optimal maturity. Fermentation and skin maceration take place under controlled temperatures for approximately 25 days. The wine is initially refined in stainless steel tanks, followed by 12 months of aging in oak barrels. It then undergoes a final 8 months of bottle refinement before commercial release.
