## About this wine

Bodega Doña Felisa was founded in 1999 by José María Losantos Hernando and Gema Alonso Araico in Ronda, Andalusia. Named in honor of the family's matriarch, this estate operates as a château-style winery surrounded by high-altitude vineyards near the ancient Roman ruins of Acinipo. Situated between 800 and 900 meters above sea level, the vineyards benefit from dramatic diurnal temperature swings and cool coastal influences from both the Mediterranean Sea and the Atlantic Ocean.

## Interesting facts

- The estate vineyards sit adjacent to the Roman ruins of Acinipo, an ancient settlement historically translated as 'land of wines'.
- Harvest is conducted strictly at night to keep grape temperatures low and preserve fresh fruit aromas.
- Vineyards situated at up to 900 meters elevation experience day-to-night temperature drops of up to 20°C.

## Food pairing

The vibrant mountain acidity and well-structured tannins harmonize with rich, savory proteins like roasted lamb and aged cheeses. Subtle saline notes and deep fruit aromatics also allow it to cut through rich sauces and complement earthy dishes like mushroom pasta.

## Wine making process

Harvesting is performed entirely by hand at night (vendimia nocturna) to protect primary fruit aromatics and prevent spontaneous early fermentation. Parcels undergo individual temperature-controlled micro-vinification in stainless steel tanks. The wine ages for 9 months in premium French oak barriques before further refinement in bottle prior to commercial release.
