## About this wine

Chivite Las Fincas Rosado is a distinguished rosé from J. Chivite Family Estates, one of Spain's oldest winemaking dynasties with a legacy spanning 11 generations since 1647. Produced in the IGP 3 Riberas appellation of Northern Navarra, specifically from the high-altitude Finca de Legardeta vineyard in Villatuerta, this wine benefits from a unique terroir influenced by both Atlantic-continental and Mediterranean climates. The vineyard's elevation (450-580m) and clay-limestone soils, coupled with significant diurnal temperature variations, promote gradual ripening and preserve natural acidity. This rosé is a collaboration born from a friendship between Julián Chivite and three-star Michelin chef Juan Mari Arzak, designed as a versatile gastronomic wine to complement fine cuisine.

## Food pairing

This gastronomic rosé is designed for versatility, balancing delicate fruit notes with vibrant acidity and a subtle texture. Its medium-light body and dry profile make it an excellent companion for a wide range of dishes, from delicate seafood and poultry to lighter vegetarian options and rice-based preparations. The bright acidity cuts through richness, while the subtle red fruit and floral notes complement rather than overpower the food. It excels with dishes that have a degree of complexity or subtle spice, and its structure allows it to stand up to slightly richer preparations than typical light rosés.

## Wine making process

The Chivite Las Fincas Rosado is crafted using the traditional saignée method, involving a brief skin maceration to achieve a delicate color and aromatic profile. The free-run juice is then fermented in temperature-controlled stainless steel tanks at low temperatures for 21 days, a process designed to preserve the vibrant red fruit esters. Following fermentation, the wine undergoes approximately 4 months of aging on its fine lees ('sobre lías') in stainless steel. This lees aging contributes to a softer natural acidity and enhances the mid-palate texture and volume. The wine is bottled without any oak influence, maintaining its fresh and vibrant character.
