## About this wine

Mas Guallar was founded in 2019 by Chilean winemaker Camila Opazo in the rugged landscape of Roussillon, France. Drawn to the extreme terroirs of the Vallée de l'Agly, Opazo works with low-yielding, organic plots surrounded by wild Mediterranean garrigue scrubland. Every bottle features Opazo's original artwork on the label, converting each release into a unique piece of artistic and viticultural expression.

## Food pairing

## Wine making process

Grapes are harvested entirely by hand in small crates from vines rooted in dark sedimentary schist soils. The Muscat of Alexandria undergoes a brief 2-day skin maceration to extract aromatic nuance, while the Carignan component is direct-pressed. Vinification takes place spontaneously with native yeasts, followed by 12 months of aging in stainless steel tanks without fining, filtration, or added sulfites.
