## Food pairing

As a light-bodied, chillable natural red wine with soft tannins and vibrant acidity, this wine excels alongside summer foods, grilled white meats, cured items, and fresh cheeses. Serving it well-chilled enhances its crisp berry fruitiness while ensuring it stays light and refreshing on the palate.

## Wine making process

Grapes are hand-harvested from estate vineyards with loess and red gravel soils. The winemaking blends direct-pressed juice with crushed grapes undergoing a brief four-day skin maceration. Spontaneous fermentation occurs in stainless steel tanks using native yeasts at cool temperatures. The wine undergoes natural malolactic fermentation and ages on fine lees in stainless steel tanks for up to six months before being bottled unfined and unfiltered with a minimal addition of sulfur dioxide.
