## About this wine

Bistro Louis Séverine is a boutique natural winemaking project formed by Séverine Perru, former wine director of New York City's The Ten Bells, and Louis Broderick from Basket Range Wine in South Australia. Operating out of Alsace, they collaborate closely with natural winemaking pioneer Christian Binner, sourcing from organic and biodynamic vineyards in Ammerschwihr. The Chrysalis cuvée represents their philosophy of crafting honest, unpretentious wines designed for joyful, communal table drinking.

## Interesting facts

- Chrysalis is an annual micro-collaboration with Alsatian natural wine pioneer Christian Binner.
- The 2024 vintage yielded only two barrels, totaling around 500 to 600 bottles worldwide.
- It co-ferments red Pinot Noir with white Sylvaner and Muscat Ottonel grapes in a single vat.

## Food pairing

The light frame, vibrant acidity, and soft tannic structure make this wine extremely versatile at the dining table. It cuts effortlessly through fat in duck, pork, and soft cheeses while avoiding harsh tannic clash with tender white meats or delicate earthiness from mushrooms.

## Wine making process

The grapes—Sylvaner, Muscat Ottonel, and Pinot Noir—are co-harvested on the same day from clay and granite soils. Vinification begins with a seven-day whole-cluster co-maceration in open vats before traditional basket pressing. Fermentation occurs spontaneously using ambient indigenous yeasts with zero synthetic additives. The wine ages in a single old oak barrique for nearly a year before gravity bottling without fining, filtration, or added sulfites.
