## About this wine

Cielo e Terra was founded in 1908 by Giovanni Cielo in the Veneto region of northern Italy, near the historic castles of Romeo and Juliet. Today, the fourth generation of the Cielo family, Luca and Pierpaolo, runs the estate in partnership with Cantine dei Colli Berici. As a certified B Corp and Società Benefit, the winery is deeply committed to social and environmental sustainability, partnering with charities like Wine to Water and using lightweight glass bottles to reduce their carbon footprint. This Sauvignon Blanc is part of their Orange Collection, which highlights accessible, sustainably produced Venetian wines.

## Interesting facts

- Founded in 1908, the winery is located near the legendary castles of Romeo and Juliet in the Vicenza hills.
- Cielo e Terra is a certified B Corp that funds clean water projects globally through the Wine to Water charity.
- The grapes are harvested at night to preserve the delicate, volatile aromas of the Sauvignon Blanc grape.

## Food pairing

This crisp, high-acidity Sauvignon Blanc pairs exceptionally well with dishes that match its fresh, herbal, and citrusy profile. Its vibrant acidity cuts through the richness of goat cheese and complements light, lean seafood, while its herbaceous notes harmonize beautifully with green vegetables like fennel and asparagus.

## Wine making process

The grapes are harvested from vineyards across the Veneto region, featuring clay-limestone and volcanic soils. To preserve the delicate primary fruit aromas and natural acidity, harvesting is conducted during the cooler night temperatures. The grapes undergo a gentle pneumatic pressing, followed by temperature-controlled fermentation in stainless steel tanks using selected yeasts. To maintain the wine's crisp, vibrant character, malolactic fermentation is blocked. The wine is aged briefly in stainless steel vats before being bottled under a Stelvin screw cap to preserve its freshness.
