## About this wine

Clafoutis is the négociant label created by winemaking duo Tess Davison and Charles Ripoche under their estate Les Davoche in Roussillon. Davison, a former chef at Noma and Mugaritz, joined forces with Loire Valley-trained Ripoche to partner with local organic growers across Roussillon. Together, they craft fresh, low-intervention wines while developing their own estate vineyards.

## Interesting facts

- Co-winemaker Tess Davison transitioned into natural winemaking after working as a chef at world-renowned restaurants Noma and Mugaritz.
- Co-winemaker Charles Ripoche learned winemaking under Loire legends Antoine Foucault of Domaine du Collier and Cyril Fhal of Clos du Rouge Gorge.
- This natural wine is produced with zero added sulfites, unfined, and unfiltered from organically farmed old vines.

## Food pairing

The vibrant natural acidity, soft fine-grained tannins, and supple red fruit profile of this light-to-medium-bodied natural red complement roasted white meats, savory charcuterie, and earthy mushroom dishes without overpowering them.

## Wine making process

Hand-harvested organically grown Carignan Noir and Grenache Noir undergo a gentle eight-day maceration with whole-cluster Carignan layered over destemmed Grenache. Fermentation occurs naturally with wild yeasts using traditional gravity and basket pressing. The wine ages for nine months in old oak barrels and five months in bottle, bottled without fining, filtration, or added sulfites.
