## About this wine

Domaine Clos Bateau was established by former Amsterdam restaurateurs Sylvie and Thierry Klok-de Visser, who moved to Beaujolais in 2019 to practice natural winemaking. This cuvée comes from the lieu-dit Le Pavé, perched on the eastern slopes of Mont Brouilly. The vines grow in distinctive volcanic bluestone soils (diorite). The 2024 growing season presented cool and demanding weather, producing a limited yield of only 2,140 bottles.

## Food pairing

This vibrant, light-to-medium-bodied natural Gamay thrives alongside dishes with earthy mushroom notes, lean game meats, and roasted vegetables. High natural acidity cuts through richness, while soft tannins permit pairing with firm, meaty fish like tuna without producing metallic off-flavors.

## Wine making process

The grapes were hand-harvested and subjected to a two-week whole-cluster semi-carbonic maceration. Fermentation occurred spontaneously using indigenous yeasts without added temperature control or enological additives. The wine aged in used Burgundy oak barriques before being bottled unfined, unfiltered, and with zero added sulfites.
