## About this wine

Coenobium is crafted by a community of around 80 Cistercian nuns residing at the Monastero delle Suore Trappiste in Vitorchiano, located north of Rome in Lazio. Living by the Benedictine rule of ora et labora ('pray and work'), the sisters manage their agriculture by hand. In the early 2000s, Giampiero Bea, son of renowned Umbrian natural winemaker Paolo Bea, partnered with the monastery to refine their viticulture and low-intervention cellar practices.

## Interesting facts

- Produced by over 80 Cistercian nuns living under the Benedictine rule of Pray and Work in Vitorchiano.
- Developed in collaboration with Giampiero Bea, son of legendary natural winemaker Paolo Bea.
- Grown on volcanic soils in Lazio that impart a distinct mineral character to the wine.

## Food pairing

The elevated acidity and light skin-contact structure cut through rich cheese and egg-based pasta sauces like Carbonara and Cacio e Pepe, while complementing roasted poultry and fresh seafood.

## Wine making process

Organically grown indigenous varieties are harvested together by hand from volcanic soils. Fermentation occurs spontaneously with native yeasts in stainless steel and fiberglass tanks, incorporating approximately one week of skin maceration without temperature control. The wine is aged on its fine lees before being bottled unfined and unfiltered, with only minimal sulfur added prior to the following harvest.
