## About this wine

Azienda Agricola De Fermo is operated by Stefano Papetti Ceroni and Eloisa De Fermo in Loreto Aprutino, Abruzzo. While Eloisa's family has owned the property since 1785, the estate's modern wine resurgence began after Stefano discovered a long-hidden 18th-century cellar beneath the family home in 2009. Working with certified organic and biodynamic viticulture, De Fermo focuses on non-interventionist winemaking that honors traditional Abruzzese terroirs.

## Interesting facts

- The winemaker discovered a hidden 18th-century wine cellar buried beneath the family residence in 2009.
- The estate land has remained in the same family since 1785.
- The wine undergoes zero oak contact, fermenting and aging entirely in concrete tanks.

## Food pairing

The wine's bright natural acidity and gentle tannins make it an exceptionally versatile pairing partner. It cuts through the fat of cured meats and grilled pork while perfectly matching tomato-based sauces and rich cheeses.

## Wine making process

Harvested entirely by hand from four distinct estate vineyard plots at 280 to 320 meters elevation. The Montepulciano grapes undergo a brief 4 to 5 day skin maceration before 100% spontaneous fermentation with indigenous yeasts in concrete tanks without temperature control. The wine is aged for 7 to 10 months in 20-hectoliter cement tanks on fine lees with zero oak contact, and bottled unfined and unfiltered with minimal added sulfur.
