## Food pairing

The wine's full body, polished tannins, and structured character make it an excellent companion for rich, protein-heavy dishes. The tannins bind with proteins in the meat, softening the wine and cleansing the palate. Its complex notes of spice and earth complement savory flavors, while the balanced acidity cuts through richness.

## Wine making process

The 2019 Finca La Esclavitud Edición Limitada is produced from 100% Tempranillo grapes sourced exclusively from the Finca La Esclavitud vineyard. The grapes are hand-harvested and selected. After alcoholic fermentation, the wine undergoes malolactic fermentation in new French oak barrels. It is then aged for two years in these same new French oak barrels, followed by a minimum of two and a half years of bottle aging before release. This extensive aging process is designed to develop complexity and refine the wine's structure.
