The 2018 vintage was characterized by a cool, rainy season, leading to wines with enhanced freshness and aromatic expression.

## Food pairing

The wine's full body and robust structure can stand up to rich, flavorful dishes. Its tannins complement the protein in meats, while its inherent freshness can cut through fattier components. The earthy notes often found in Ribera del Duero wines can harmonize with similar flavors in food.

## Wine making process

Corimbo I is produced from 100% Tinta del País grapes. The alcoholic fermentation is spontaneous and takes place in French oak vats, employing indigenous yeasts. Following fermentation, the wine undergoes malolactic fermentation in barrels. It is then aged for 16 months, with 80% of the aging occurring in French oak barrels and 20% in American oak barrels. The vineyards are managed using organic farming practices, with non-irrigated bush vines.
