## About this wine

Còsmic Vinyaters was founded in 2013 by winemaker Salvador 'Salva' Batlle Barrabeig, practicing natural winemaking across Alt Empordà and Baix Penedès in Catalonia. 'Vi de Pagès' honors the agrarian heritage of Catalan farm families who co-fermented whatever native grapes grew together in local field-blended plots. Batlle reimplemented this tradition into a modern, 3-liter bag-in-box eco-packaging, aiming to make authentic natural wines accessible for daily drinking. His winery integrates biodynamic viticulture alongside holistic philosophy in both vineyard and cellar.

## Interesting facts

- 'Vi de Pagès' revives the traditional Catalan agrarian practice of co-fermenting field-blended red and white grape varieties.
- Winemaker Salva Batlle incorporates biodynamics and sound resonance in his low-intervention winemaking process.
- Packaged in a 3-liter bag-in-box format, keeping the zero-sulfite wine fresh for up to 6 weeks after opening.

## Food pairing

This light, high-acidity co-fermented red pairs naturally with savory Spanish tapas, cured meats, and earthy Mediterranean vegetables. The bright acidity slices through fat in cured pork, while the delicate tannins complement light proteins and rustic bread dishes without overpowering them.

## Wine making process

Grapes are harvested manually in small crates from old vines planted on poor granitic soils in Agullana. The red, white, and grey grape varieties undergo a short co-maceration with whole cluster and destemmed fruit. Spontaneous fermentation occurs using indigenous yeasts in stainless steel and fiberglass vessels. The wine receives no chemical adjustments, is left unfined and unfiltered, and is packaged without added sulfur dioxide (<10 mg/L total naturally occurring SO2).
