## About this wine

Charles Dufour is recognized as one of the Côte des Bar's leading natural winemaking visionaries. Based in Landreville in Champagne's southern Aube department, he converted his family estate to organic viticulture in 2010. Coteaux Champenois is Champagne's rare still wine appellation, and Dufour's Vin de Comptoir is drawn directly from his dynamic perpetual reserve solera system established in 2010, incorporating family reserve wines dating back to 1982.

## Interesting facts

- Coteaux Champenois is a rare still AOC in Champagne, where almost all grapes go into sparkling production.
- The wine is drawn from a continuous solera perpetual reserve with base vintages dating back to 1982.
- Crafted without added sulfur dioxide, fining, or filtration, representing authentic low-intervention winemaking.

## Food pairing

The high acidity and saline chalky minerality cut through rich seafood and creamy sauces, while subtle oak aging and perpetual reserve depth complement roasted poultry and regional soft washed-rind cheeses.

## Wine making process

Grapes are organically farmed from Kimmeridgian and Portlandian limestone soils and harvested manually. Spontaneous primary fermentation occurs with native yeasts in oak barrels and large foudres, followed by complete natural malolactic fermentation. Drawn from a perpetual reserve solera, the wine is bottled without added sulfur dioxide, fining, or filtration.
