## About this wine

Coule de Source is a pure expression of Chenin Blanc produced by Jérôme Lambert in Rablay-sur-Layon, Anjou. Lambert, a native Angevin who built his estate from less than one hectare without inheriting family vines, now farms 4.5 hectares with a strict natural philosophy. Guided by legendary Anjou vigneron Richard Leroy, Lambert crafts unadulterated wines from 40-year-old vines grown on dark schist and sand soils in the Anjou Noir terroir.

## Interesting facts

- Winemaker Jérôme Lambert operates by the personal mantra 'Soufrer n'est pas jouer' (Sulfur is not a game).
- Coule de Source is the earliest harvested of Lambert’s Chenin Blanc cuvées to maximize acidity.
- Grown on pure dark schist and sand, locally known as the distinctive Anjou Noir terroir.

## Food pairing

High natural acidity and mineral tension make this wine an exceptional match for fresh seafood and tangy goat cheeses. The lean structure and citrus drive cut through butter sauces and balance the salinity of raw shellfish without overwhelming subtle flavors.

## Wine making process

Harvested early by hand to preserve fresh acidity, the whole clusters undergo direct pressing into tanks for spontaneous fermentation using indigenous yeasts. The wine ages on fine lees in fiberglass or stainless steel vats for 10 to 12 months without oak influence. Bottled without fining, filtration, or added sulfur dioxide, maintaining zero chemical additives throughout production.
