## About this wine

Planted in 1130 by Cistercian monks, the Coul)e de Serrant vineyard has maintained continuous vine cultivation for nearly 900 years. Nicolas Joly took over management of the family estate in the late 1970s and became a world pioneer of biodynamic viticulture, converting the entire vineyard by 1984. Today, his daughter Virginie Joly manages the winemaking, preserving the estate's philosophy. Coul)e de Serrant is an independent single-estate monopole granted its own official Appellation d'Origine Contr)l)e (AOC).

## Food pairing

The concentration, high acidity, and full texture of Coul)e de Serrant demand richly textured protein dishes, butter or cream-based sauces, and aged goat cheeses to balance its powerful structure.

## Wine making process

Grapes are harvested manually in three to five successive passes across several weeks to capture optimal ripeness and noble rot. Fermentation takes place in 500-liter neutral oak barrels using only indigenous native yeasts. The wine undergoes minimal cellar intervention with no chaptalization or temperature manipulation, aging for 6 to 11 months in oak with less than 5% new wood, followed by minimal sulfur addition prior to bottling.
