## About this wine

SAS Zéroine was established in 2018 by Maylis Bernard, a former IT project manager hailing from a winegrowing family in Château-Chalon. Located in Rotalier within the Jura region, Maylis created the estate with guidance and support from her partner, renowned natural winemaker Jean-François 'Fanfan' Ganevat, and his sister Anne. The estate name is a play on 'Zéro' for zero-additive winemaking and 'Héroïne' celebrating women in viticulture. This micro-cuvée originates from organically farmed vineyards in L'Étoile.

## Interesting facts

- The name Zéroine combines 'Zéro' (zero added sulfur) with 'Héroïne' to honor women in winemaking.
- Founded by Maylis Bernard in collaboration with natural wine legend Jean-François Ganevat.
- Bottled as Zéro Dosage and produced with zero added sulfites, fining, or filtration.

## Food pairing

The wine's zero-dosage dryness, razor-sharp natural acidity, and intense saline chalkiness effortlessly cut through rich seafood, butter, and nutty aged cheeses while accentuating fresh maritime flavors.

## Wine making process

Harvested by hand in 2020 from clay and calcareous marl soils in L'Étoile, the Chardonnay grapes undergo whole-cluster direct pressing followed by light settling. Fermentation occurs spontaneously with indigenous yeasts in 500-liter oak demi-muids. The wine matures on primary lees for one year with bi-weekly topping up before secondary fermentation in bottle. It spends nearly four years aging on its lees prior to disgorgement without dosage, fining, filtration, or added sulfur.
